I never got a concrete answer from the wiki, but I am dual booting windows 10 with linux. I use linux 99% of the time, and very rarely go to my windows side.
Is it only dangerous to hibernate and sleep if I hibernate and then switch to the other OS?

Pretty much, if you hibernate and don't switch OS for the next boot this is technically unproblematic. Whenever you switch do an actual proper reboot without hibernation (... and to that effect disable "fast startup" in Windows)
