Trouble getting GNOME to play nicely with high refresh rate monitor

Hey all,

I've recently acquired a high refresh rate ultrawide (3440x1440@100hz).
Whenever I select 100 hz (which shows up as 99.99hz) in Gnome's display settings, it says it changes the refresh rate but it doesn't actually do it - I've confirmed this by setting Clutter's show FPS flag and checking the values in Journalctl. If i finagle with the settings (setting the display to 1920x1080 mirroring my laptop's display, it happily does 100hz) I can sometimes get it to stay in 100hz mode at full resolution. Whenever this happens, however, large parts of the screen are cut off - see this photo I took to understand what I mean. Whenever the display is like this, it does actually run in 100hz mode as confirmed by Journalctl and the monitor's OSD.

I've been playing around with a bunch of settings but I'm stuck - I'd be really grateful for any help or input! Let me know if I need to share any specific information needed for troubleshooting.
