I'm trying to use an ethernet cable, connected through a usb adapter. I'm failing at the first step in the wiki, which is to find the device and kernel modules for the ethernet controller.

The cable is definitely ok because it worked fine on Win10. When it's plugged in (through the adapter), it does show up in lshw.

If it's connected via USB, not PCI, then you need to use lsusb, not lspci.

USB isn't PCI, so lspci will likely not list any USB devices. You have a typo in your first command, btw, it should be lspci, not lscpi. You can use 'lsusb' from the usbutils package to list all usb devices.
But what is your actual issue? If it gets assigned a network device, it's working, I assume?

Ok thanks. How can I find the kernel module containing the correct driver then? I don't see anything that looks like the 'Kernel driver in use' field from lspci.

So there's your NIC and your module and it's also showing up in lshw and likey "ip a" - is there an actual problem or is this more a theoretic exercise?
What's the output of "ip a" and "systemctl status dhcpcd"?
