Hello, I am planning to install Arch later but I want to dual boot with an existing encrypted Linux Mint installation. Is it possible to use archinstall to mount this encrypted partition as home partition in Arch Linux?

Possibly, possibly not. You haven't told us anything about how this /home partition is encrypted.
It will definately be possible if you do a manual installation rather than using the archinstall script.

I am not sure how the encryption is done. Looking at the home folder it has .ecryptfs folder so I assume this is the how.

Reading the Arch wiki tells me that it only encrypts the home folder not the whole partition

Then you'll need to ask on the Mint support channels to find out - we don't know how Mint is configured.

It is done using ecryptfs. I did the research. I think I am going to remove the encryption since I don't have to worry about third parties having physical access to my data.
