I recently installed arch on my pc, it's a Starlabs mkIII with 8th gen i7 and coreboot BIOS. What are the chances of me having some kernel update that does not boot or similar issues, I have been running the latest kernel with no problems so far, after 3 upgrades after my install everything is so stable. But I ask myself if having also the LTSversion would be a nice idea.

It's impossible to generally predict that. And the S in LTS stands for support, not stability, if you have a update that happens to be in the stable patch series breaking something chances you will run into it in both kernels.
A "safe" strategy is to have both kernels installed so you have something to fallback to if it happens, maybe even hold the LTS kernel on a known good version with e.g. IgnorePkg and only explicitly updating that when you know that the newest stable kernel is stable.

I am running on a StarLabs MK IV. After one Kernel update I got screen flickering to the point I could not use the laptop.
Booting with LTS did solve the problem by now.
I would also recommend both kernels to unblock yourself.
