I've been using arch for the last 10 years or so and are really only having difficulties with network-related stuff.
Nextcloud has been running on an ARM device for the last couple of years and I have updated it without problems. Now it is supposed to be run from better hardware, but the wiki is hardcore. Can't even get pass php-fpm without errors that I have narrowed down to the user field in the config. And there is no holding hands in the apache setup and figure it's gonna take at least a couple of days to setup, if everything is to be understood from zero, IF i succeed. Before there was a copy/paste wiki, but due to changes to php/nextcloud that no longer exists. Got so frustated that I thought about debian, but hey, they have already seen the light and are not touching that S*.
And I'm not touching docker. Don't like the pre-configured stuff.
Isn't there an alterantive to nextcloud that supports file history that is NOT web based?

What's your issue with docker? It's an official image from the Nextcloud developers so if you don't trust their docker image you shouldn't trust a built from source version either.
I've recently switched most of my web services to docker for the same reasons that you are looking for - easier installation, configuration and maintenance whilst also being supported by the upstream developers.
