I think if this goes nowhere then it might be worth installing Ubuntu and seeing if that crashes.

You can get something similar to dmesg with

journalctl -k

and you can get this for past boots with

journalctl -k -b -<n>

where <n> is the number of boots you want to go back e.g. -b -1 for the previous boot, -b -2 for the one before etc.

Took a while to get back to this - I've been really busy the past few days. I was using my old laptop while letting this one run code and occasionally interacting with it but I haven't experienced a crash in over a week now. I'm not sure what changed (other than I now explicitly remember installing the amd-ucode drivers). I'm going to keep my sensor logs and dmesg logs going and install the nvidia drivers again and hope that it continues to work. Be back with an update in a few days. I haven't experienced any more crashes. I wonder if the amd-ucode is what fixed it. But now I'm having issues integrating nvidia and X. I just finished installing Ubuntu and am going to test things out there but I think this issue is resolved so I'm going to mark it solved. Thanks cfr and topcat01 - I appreciate your patience and your discussions!

Just for curiosity - are you using integrated WIFI adapter? I have similar crashes, but updating microcode did not help. The only thing I found out so far that help is to disable integraded mediatek wiifi/bt adapter (MT7922).
