I still don't understand how to enable HDR gaming on Linux.

I've read the ArchWiki: https://wiki.archlinux.org/title/Gamescope#HDR_support
It says that I have to add --hdr-enabled to enable HDR gaming on gamescope, but it never works.

You can only do that if gamescope is your actual complete session (i.e. not start it from your DE), with a relevantly patched kernel, and with amdgpu: https://github.com/doitsujin/dxvk/releases/tag/v2.1

No. This is a highly experimental patch that is not part of any normal release yet.
