So after looking for some time, I was not able to make it work. I tried other Gnome distro and re-installing Arch with the Gnome profile and none of them displayed anything. I ended up switching to another DE (all other DE/VM I tried works fine, only Gnome and Gnome-based DE does not).

If we disregard the "other Gnome distro" and assume that simply "re-installing Arch with the Gnome profile" (whatever that may be) preserved your $HOME that's kinda moot.
If you want to use gnome (and don't want to start w/ a fresh user account or remove ~/.config/dconf/user* and can't get its re-configuration out of the way otherwise) you could use https://wiki.archlinux.org/title/GNOME#Autostart to steamroll an xrandr call over gnome.
