boot problems with grub/LUKS/fallback unclear reason

Hi everyone,
I did a fresh installation of arch + kde resently on a win 10 dualboot (seperate nvme drives). I had endevourOS on the drive before but thought I give arch + kede wayland a try. My system is:

* latest arch linux installed with a bootable drive using the archinstaller script
* btrfs file system with default/recommended settings, snapshots and encryption
* KDE plasma wayland + some basic packages, Konsole, Python, paru, ....

I had some issues with my logitech mouse, (short freezes when hovering over windows) and tried to fix it by changing the polling rate and added the windows partition to grub. I can not say what caused the problem but:

1. after selecting the grub entry and entering my encryption password, the display is black for a second and then only a steady

_

is shown. No possibility for a tty or emergency shell.

2. I used the fallback initramfs to boot into arch again and tried to update my grub.conf with 

sudo grub-mkconfig -o /boot/grub/grub.cfg

, after that, it seemed to work correctly again.

3. another reboot later and even the fallback did not boot with the same behavior. I tried to find out how it behaves, but it does not seem to have a pattern when Linux or the fallback boots. (win 10 boots fine).

4. When booting is working, I have no working ethernet (network unreachable). I assume it is a side effect of the current state, but before that it was working withing the fallback.

5. I can open the GRUB-Shell, but I don't know how to go from here. I checked the drives with

ls

and get hd0, hd1, hd1.gpt1 ... Furthermore, I can

ls (hd1,gpt1)/

and

cat grub/grub.cfg

but how do I deal with the encrypted disk, (hd1,gpt2) can not be read (I assume due to encryption).

Debugging this issue already took more time than I would need to reinstall, but I would rather fix the issue and learn something along the way. If you could give me some pointers if I should try to roll back to a working snapshot or fix the grub or boot order, that would be very helpful to me,
