Hi, so I have my Mic connected to a Scarlett 4i4 and the Multichannel Input selected in the Voice & Video Settings.
However, while the audio output works without problems, Discord does not recognize any input from my microphone.
I'm using this mic all the time with Google Meets and Teams on the same machine and haven't had any problems there.

Did you disable remixing/use-all-channels in pulse configuration? More generally speaking you want to find out which actual channel of the "multi-input" your microphone actually corresponds to (... did you make sure it's plugged into the same "correct" input every time?) FWIW what output do you get from
amixer -c2
If you've identified the correct channel you'll want to make a remap-sink config that maps a mono mic input to the corresponding input channel on the focusrite so that applications don't throw a fit if they suddenly see a multi-channel input they can't handle.

When I run
amixer -c2
I get no output at all.
In Audacity the Focusrite is shown with 6 Input-Channels my mic is on channel 1 confirmed.
I tried figuring out how to create such a remap sink and used this command
pacmd load-module module-remap-sink sink_name="Mono-Focusrite-Mic" master=alsa_input.usb-Focusrite_Scarlett_4i4_USB_D885Y2308129CF-00.multichannel-input channels=2 channel_map=mono,mono master_channel_map=front-left,front-right
But that didn't do anything. Can you probably help me figuring out what the correct command might be?

You'd want a mono channel and a source rather than a sink (sorry I notice I mentioned sink rather than source), so rather
pacmd load-module module-remap-source source_name="Mono-Focusrite-Mic" master=alsa_input.usb-Focusrite_Scarlett_4i4_USB_D885Y2308129CF-00.multichannel-input channels=1 channel_map=mono master_channel_map=front-left
or whichever master_channel is correct. Then you can try recording with e.g.
parecord -d"Mono-Focusrite-Mic" test.wav
if that worked you can move the applications to record from the remap source
