I am completely relying on systemd-gpt-auto-generator (https://wiki.archlinux.org/title/System … tomounting) for mounting my partitions, and therefore do not need /etc/fstab. When I delete it and reboot I see an empty /etc/fstab that was created automatically. Is there any way to prevent this behaviour?

It is created by systemd-tmpfiles-setup.service following the instructions of /usr/lib/tmpfiles.d/arch.conf. If /etc/fstab is missing, it creates the file by copying /usr/share/factory/etc/fstab.
There's no harm in having an empty /etc/fstab, but if it really bothers you, then you can add usr/share/factory/etc/fstab to NoExtract in /etc/pacman.conf and delete the file afterwards.
