Removed SOLVED as now nvidia-smi reports:

Ahh, will i need to do this in the future or is it a one time thing due to me having to delete the dkms files manually?

No, this is only because the module was previously resolved to the dkms file.
Also kernel updates will run depmod anyway to update the modprobe database.

So "no" - it's just the most common way to get to the symptoms you experienced, so the first thing to check.
