After opening the lid my date is sometimes shifted far to the future.

It's happening every other day- I did not find the exact way to reproduce this yet, but I'm using atuin and this saves the timestamp of my command history so I can compare it.
After opening the laptop today the timestamp was `3410415456982170138` which looks like it's twice as the current unix timestamp - the timestamp of the next command after setting the date was `1705224350595254070` which is aligned with the current unix timestamp. It looks like it's somehow bitshifting the timestamp and that's why it's twice as large?
I have a lenovo ideapad 5 with amd 7940hs. This did not happened on my previous intel laptop.

Try

timedatectl set-ntp true
