NVRM: GPU has fallen off the bus.

My GPU was working fine up until this point, not sure what the problem is. Suddenly happened while playing Day of Defeat: Source where my computer went into black screen with my gpu fans throttling at full speed. Had to force shutdown the system.

Please post your complete system journal for the boot and don't coyp-paste out of the pager

XID79 "GPU has fallen off the bus." means that - the GPU dropped out of its slot.
Not necessarily physically but it no longer responds.
There're some bus errors right above that, but they seem to concern a different device (the PCIe GPP Bridge) and that might be the ultimate cause.

In any event make sure that the GPU is properly seated and the dedicated power supply is properly plugged in (to rule out mechanical issues)

Nope, the bridge just passed on an issue w/ the GPU.

Also nothing is building up to this. The incident is pretty isolated.

You could try to disable aspm ("pcie_aspm=off", https://wiki.archlinux.org/title/Kernel_parameters ) but wrt "playing Day of Defeat", track the GPU temperature, you can also annoy it a bit w/ a synthetic benchmark if the game doesn't really allow for that.

I tried multiple times screwing it on and off with the same crash. I then tried switching gpu, I was able to borrow an old RTX 1660S and this worked without any hiccup.

You mean GTX?

The failing GPU is an even older GeForce GTX 1060… can you test the failign GPU in a different system or w/ a different software stack (some live distro or even windows)?
