How can i disable Plasma Updates?

I'm using plasma 5.27 and i'm not ready to switch to plasma 6 yet because there's no Latte-Dock support and my themes haven't updated yet, how can i stay on plasma 5 and still update all my other packages?

Please do not. That is known as a partial upgrade and leaves your system in an untenable state.

It was never a CachyOS Install, i only use their kernel which is available in the AUR

Way? Yes.
Sane? No.

You can add the plasma packages to the ignore list, but that'll get you into trouble rather fast and it doesn't look like the latte-dock thing is gonna be ported anytime soon.
It's probably smarter to postpone all updates for some weeks (maybe a month) - unless there're some major CVEs, that's not gonna be a huge problem.

Or, you update and create an incentive for yourself to help out on porting the dock and theme and stuff you like to plasma 6.

you are on the wrong distribution for sticking to certain versions of packages.

latte-dock is dead for years, go try looking at the new options that got introduced, like floating panel and fit to width and also play around with different task manager alternatives.

As for themes: it does not hurt to stick with breeze for some weeks, the updates will come at some point.
