Because that's not the right format...
try root=/dev/disk/by-uuid/<your>
And make sure to rebuild your mkinitcpio image to make sure you have the latest changes

"Not the right format" is not completely correct. It is true that UUID= is supported in fstab and it may be supported by other distributions' initramfs tools. Right now, I have no intention to implement this, but (as phrakture already said) we support the root= option with a UUID. Read this article to know how it works in Archlinux.
