I try to keep my box up to date and do an upgrade approx once a month. I use current and haven't ventured in to testing or unstable territory. At start up I an informed that I am running 0.7.2 Gimmick.
I look after an Arch box for a friend that hasn't got broadband and I connect it to my network occasionally for a complete update. In this case the box had 0.7.1 Noodle installed. However, having completed the upgrade yesterday the box is booting into 0.8 Voodoo. The /etc/pacman.conf is set to current and extra, the same as mine. Why is my box showing Gimmick and the other box showing Voodoo (when I thought it hadn't been released to current)?

He is probably using a different mirror than you.
If you pacman -Syu nowadays you should get the 0.8 /etc/issue (Voodoo)

It's because the filesystem package has been updated to 0.8. As far as I am aware, the only thing holding back 0.8 from being a real release is the installer, which is being tested as we speak.

If you have modified /etc/rc.sysinit pacman doesn't update this file which is responisble for the welcome message.
