Can you keep only nvidia package back?

I know partial updates are not supported, but I was wondering if keeping the nvidia-dkms module back and upgrading the rest of the system would be considered one.

I was hit by the latest nvidia 555.58.02.1 bug which disabled my DVI monitor. I rolled back my entire system to the end of June, hoping a new version would be released soon. It's been over a month now since the buggy version was released and I see no new version in the repos, and I do not love not having upgraded my system since then.

I wanted to ask:
1. Should I be worried about running a month old system (my main concern is security), or is it not uncommon?
2. Is there a supported/recommended way of upgrading my system, but keeping the nvidia-dkms package back?

You'll have to keep at least nvidia-utils (and in case the multilib variant) at the same version.
This is gonna work as long as the dkms package still builds against the used kernel(s, eg. the LTS one will be less of a problem than the others here) and there's no major glibc/toolchain break that would require a rebuild of the nvidia libraries (by nvidia, this is extremely rare)
The approach is ok but you (generally) *have* to pay attention to the dkms build success.
