Hello to everyone,
I'm experencing issues with pulseaudio. Probably I messed it up by removing an conflicting package (pulseaudio-control)...
The daemon doesn't start and it doesn't exist

pulseaudio is a user service... as that name implies it's ran per user, so you check the status with "systemctl --user status pulseaudio" -- note the lack of a sudo. It's ran from your normal user, so you check the status as your normal user.
You'd not get that output out of pactl if pulseaudio wasn't running, so what's your actual real issue, which you haven't mentioned anything about? I see the sources are considered suspended, which might happen if you run things with pasuspend or have conflicting services or a particular application that might trigger this. What do you get from
sudo fuser -v /dev/snd/*
pactl list cards
pactl list sinks
pactl list sink-inputs

I've tried to run as you said and I discovered it was masked (idk why)

You're mixing wireplumber and pulseaudio which is generally problematic in it's own right. If you want to switch to the more actively maintained pipewire, install pipewire-pulse and let it replace pulseaudio.
