When trying to run steam through the terminal, all I get are these results:
steam.sh[33881]: Running Steam on arch rolling 64-bit
steam.sh[33881]: STEAM_RUNTIME is enabled automatically
And nothing else. My system is up to date, and steam is installed through pacman. My DE is KDE Plasma, and I am using a nvidia gpu.

I've looked at a lot of other forum posts, but none of them seem to share my issue, as far as I am aware

Is lib32-nvidia-utils installed (... and lib32-amdvlk uninstalled)? Have you seen the additional notes on the system requirements steam has? https://wiki.archlinux.org/title/Steam#Installation -- in particular the en_US locale requirement?
I'd also suggest you install steam-native-runtime you pick up some useful 32bit packages that can help with keeping steam running.

It suddenly just fixed itself? I'm not sure why, but after opening it on hyprland then going back to plasma, it works just fine now...

Having the exact same issue starting today.
For me it seems to be stuck at
/usr/bin/zenity --progress --auto-close --no-cancel --width 400 --text=Unpacking Steam Runtime
However, it does not show up at all. I'm on Hyprland
