Mail Server mieten

If I now want to offer a mail service (with my own domain).
What do I need for that, like a server or something?
If possible, the server should already have a mail server installed and unlimited mailboxes

Yes, you would have to rent (German: mieten) a server for that.
Either you go the long way and rent a VPS or bare metal and manage the whole kerfuffle on your own, which I would not recommend to somebody asking such a basic question, or you rent a hosting control panel service, such as Plesk, that simplifies things severely for the admin, but makes it less customizable.
At any rate, you won't get unlimited mail boxes, since that would probably cost infinite space and infinite money to host.

Most server management panel service contracts will provide you with a fixed limit of mailboxes, email addresses and such. You need to find the hoster and contract fitting your needs.

asking SUCH a question you clearly should NOT run a mail server your own - END OF STORY

a bit more:
I host my own server for about 10 years with my own domain and mail server - and I have to invest quite some time every day to keep things in order - and still got hacked twice
asking "what do I need to host a mail service?" already rings every alarm bell I learned in the past decade "you propably shouldn't"
rather likely you'll fail to secure your server and either become an open relay or worse get the entire server hacked and abused way worse - and not just in germany or the eu but pretty much world wide the hoster has to and will take actions like terminating your contract and shutdown your server - and it can even get you in legal trouble when someone manged to hack your server and use it to share copyrighted material - becaues then its you on the papers and have to prove it wasn't you
just for the sake of yourself - just drop whatever it is you think about and use a professional service
also: just provide unlimited mail service for everyone? yea, give me about 5 minutes and I'll use your server and your domain to spam around roughly half a million spam mails around the world getting your domain and server flagged on pretty much every spam list - getting back off of them ain't no fun - have done it and I'm still on two lists permantly
this is no hypothetical scenario - it's what happens around the clock around the world and is a huge business - getting a legit domain not yet flagged for spam? perfect target to blast millions of spam mails - it just takes a few dozen stupids to click on spam links to spread around those crypto-malware and all those scams you can watch 100s of videos about on youtube
