How to disable compatibility in Steam?

Hello everyone, I want to disable compatibility in Steam, but Steam doesn't let me do it. There is only an option to change to another version of Proton.
Steam>Settings>Compatibility and it says "Steam play enable for all titles." and i can change only Proton version. (I want play in native version of the game)

I found a way to fix it, right click to game>Properties>Compatibility>Force the use of a specific Steam Play compatibility tool>Steam Linux Runtime 1.0(scout)

what game is this about?
you can check https://steamdb.info/ and https://www.protondb.com/ if the game currently has an active and public available native linux version
