I just found a super elegant solution to the above question and figured I'd share it on the forums for posterity.
Once you have followed the Wiki's instructions on using wayland compositor for SDDM simply do the following:
1) Using KDE's display manager settings page fully configure your displays how you want them to look on SDDM (I disabled my secondary monitor)
2) In Settings > Colors and Themes > Login Screen (SDDM) click the "Apply plasma settings button"
3) Restore your preferred display settings in the display settings page.
Tada, SDDM will now only use the the monitors you want and in the configuration you want, no scripting required!
The downside to this, is that since the lock screen (IE hitting Meta + L) is actually a KDE application, these settings will not apply to it.
