I seem to be using gtk 1.5 (even with the latest Arch)

When I check for the gtk version that I am using (#gtk-config --version) I get "1.2.10". How can I switch to gtk2.0?

You don't need to worry about that. Arch has a package for gtk 1  (gtk) and one for gtk 2 (gtk2).  All gtk apps except  a few ones like xmms use gtk2. So it's probably already installed on your system.
