since a long time now the brightness (and other color) controls in various players (mplayer, kaffeine) do not work anymore for me, and i dont know why, it simply stopped working...
the only app that can actually do this on my system is vlc, but i dont like it that much and want to use kaffeine or mplayer...
so, whats going wrong here?

I had time ago the same problem. Basically, i had to disable composite extension to solve it.

So, is this a nvidia bug or something with the xserver? I would like to fill a bug report somewhere but i dont know where... Google also tells me nothing about this issue.
My problem also differs a bit from your one. I can not change the brightness in several video players, but the xvideo properties in nvidia-settings are still available and useable with composite enabled...

Ok, found a statement from nVidia about that:
The XV video overlay adaptor is disabled on X.org 7.1 when Composite is enabled because it's incompatible with Composite. The blitter and texture adaptors don't have brightness or gamma controls. If you want to use the video overlay adaptor, you'll have to disable Composite.

Doesnt work... Well, i think its a hardware problem...
Modern Geforce6/7 GPUs (except for the first NV40 generation) don't support video overlay anymore in hardware. Some basic blitting is done for those when Xv is used. For these boards options like XV_BRIGHTNESS aren't available anymore though I don't think this is what's wrong in your case.
Further on cards that DO support 'real' Xv, this support is disabled in some cases. For instance it is disabled when Composite is enabled.
