once you know what they are you judge by yourself if you need them or not.

crond may be safe to stop if you don't use it. But if there is not a good reason, syslog-ng should be started always as it provides the system logger and some other daemons depend on it. And gernerally it is a good thing to have some logs around you to debug failures.

cron, even if *you're* not doing anything with it, is still useful. By default it manages the 'locate' db and logrotate.
syslog-ng (or some other syslogger) should *definitely* be there.
