I think most of us use Eclipse for Java stuff. Awesome IDE :-)
For web dev, i started with Aptana..but it seemed too heavy. Geany rocks for c/c++/php/css/html/js etc.
For small editing stuff, i prefer VIM.

VIM is tricky to work with since I'm a Dvorak typist.  I'm sure there's a script out there to change the keys.
