Install pkg-config with "pacman -S pkgconfig". The error message give you all information you need.

Now it says:

conky 1.4.8 configured successfully

when I run make, command not found

Is make itself not found or does that "command not found" come from some call in the Makefile?
I know this is not an answer to your problem, but using ABS might be easier for you. :> But if you want to continue to build the package yourself to practice and understand, of course I'll help you. Just wanted to tell you about ABS. :>
