Gnome menu file

Alacarte has many weaknesses. Is there a gnome menu file that can be edited to change the menus? I need to overhaul a menu.

if you go into /usr/share/applications, you can change the desktop files.  That's what I did.

All those files seem to have is application names. What specific file did you use to edit the menus?
