Once every few days or less, my system completely freezes to the point that the screen is not updated, the mouse cursor is stuck and cntl+alt+backspace does nothing. Infact, I literally can't do anything except stare at the screen and cry, then push the power button for a hard reset.
It happens when I'm running these programs. Maybe it's one of their faults:
Openbox
Conky
Firefox
Stalonetray
Tint
gtk-gnutella
xcompmgr
claws mail
pidgin
urxvt
Deluge
That's literally every app I run regularly.
What logs should I check for this? I've scanned a bunch but found nothing alarming.

It would be helpful if you posted what your graphics card is, both chipset and manufacturer.

Maybe I have the same problem. I don't know whether it depends on the programs I am running. I can't reproduce the freeze. It happens sometimes, not every time. I don't know when it happens, but suddenly the whole system hangs an there's nothing I can do then pressing the "Reset"-button on my case. By the way, I am using the latest nvidia driver, too. Anyone knows where to look for system messages or something? Last night I disabled Advanced Power Management in my BIOS - maybe that helps. I will inform you later...

I have the same problem. In the last days, all the system got freezed when I was running Eclipse.

Well, I don't use Eclipse. Sometimes it just freezes while using Opera. And I have the strong feeling that it also freezes even if there is no active application running (besides from background tasks).

That's what it feels like to me too.
Sometimes I'll just come back to my computer after getting coffee or lunch and my conky clock has been stuck for 20 minutes and my whole system is completely locked up.
It seems like the only thing we have in common is the nvidia driver. Do we think it's that?

Possible. nVidia driver already caused similar problems in the past. Try running with the "nv" driver for a while. If not, the locks can be either bad memory (RAM), or even overheating.

I put noapic nolapic in the grub line to no avail.
It only happens on my 64 bit AMD desktop / ASUS motherboard.
My laptop never freezes.

Check nvforums (nVidia oficial forums). There is a section for Linux support there, most of time nVidia developers announce bugs and collect feedback there.

2 GeForce 7300 cards.
Interestingly the laptop also has an NVidia card but causes no problem using the same driver (albeit the 32 bit version) .
The only vaguely interesting line in the "everything" log is
Jul 29 14:43:43 mb-desktop 6:1:1: cannot get freq at ep 0x1
The usual pptp_gre packet buffering messages occur for another 5 minutes until the syslog starts again after reboot.

Maybe I'm a bit unpatient? I've never waited longer than a few seconds for the system to come up again... I'll give it a try next time!
But I tried [Ctrl]+[Alt]+[F1] and all the other terminals - nothing happend.
And I also tried [Ctrl]+[Alt]+[Backspace] to reset my x-server - didn't work.
Seems like the system is really dead then.

I'm having the same problem.
No matter if I'm running xfce or fluxbox, with or without apps.
I'm running arch on my thinkpad x61 with intel graphics and driver.
My caps lock button starts blinking when the system freezes.
I'm running testing&unstable repos, that might have something to do with it. But it still feels strange that the system can freeze anytime no matter what's running.
Re installed my networkmanager with stable repos and hoping for a change. (system feezed one time when I was rebooting my comp and i froze when it was shutting down the network.)
