I'm running a server and I want to make sure packages that are graphics related, (X) etc are never installed. In Gentoo I'd make a use flag for that (-X), is there some way to do that in Archlinux?

Just make sure you never install a package that requires x11? There's probably an option in pacman for it

Just avoid installing anything with a GUI. The only thing that I know that isn't graphics based that wants to pull in graphical parts of X11 is texlive.

All I can tell you is to watch what pacman is trying to install. If you see anything X related, then you'll know something GUI is being installed...
It shouldn't just decide to install something X related if you do standard system updates and such.
But as you're running a server, you should keep an eye out on what's installed, and pacman does a good job at telling you what it's going to do...
