How do I get pacman to default to "yes" for all questions. I want to issue an install command and come back later and find it fully installed, not hanging there waiting for me to press the yes key.

The "--noconfirm" option should do that.
And where were all the sportsmen who always pulled you though?
They're all resting down in Cornwall
writing up their memoirs for a paper-back edition
of the Boy Scout Manual.

Or if you want a more general option,
yes | pacman blah blah blah
archlinux - please read this and this — twice — then ask questions.

Thank you! Both of them work well.

Also, add:
--noconfirm

In short: '--noconfirm' works well for installing. 'yes |' works well for -Scc cleaning.
