im using kde4.1 and amarok2-svn, but when mount my ipod dmesg show this message:
FAT: utf8 is not a recommended IO charset for FAT filesystems, filesystem will be case sensitive!
i know that udev make the magic, but see a lot of rules files.

You should be able to manipulate the charset in /etc/fstab.
