GNOME 2.8 : How do I change the icon for a given filetype?

Ok, this is driving me nuts... does anybody know how to do this?.. In GNOME 2.6 there was an option in the control panel called Filetypes and programs, but is gone now...

if I right click in a file and then select properties im able to change the icon for THAT file, but i want to make the changes to be global.. i.e. for all files of type application/ms-word, not just that particular file

I don't know if there's an easy/official way to do this but all the mimetype icons seem to live in /opt/gnome/share/icons/*/mimetype where * depends on what icon theme you're using...
