Is there anything that works like Emerge in Gentoo that will compile the package instead of downloading the built .pkg.tar.gz?

I didn't think Yaourt did that. But apparently Pacbuilder can do that. Never mind then.

yaourt -G or something, but even better; just cp and makpkg by hand

I think that's only a wrapper around yaourt -G functionality and makepkg -s, i.e., it only build the packages you specify, but the dependencies are still installed via pacman.
