You'll see that the default color depth is 16. Under the 16 section, the largest resolution is listed as 1024x768, which is why that's the largest you can select. If you want different resolutions (assuming your video card and monitor can do them) add them. Personally, I would make my default color depth 24 and add them there. See the configure X section of the wiki for more info.

Can you try removing/commenting all the modeline stuff in the monitor section and try to let X sort that out, while still leaving the Modes lines with your preferred resolution first.

Yes, I have done that before. For example CentOS seems like it isn't able to detect the maximum resolution of my tft so I have just added it to the modes line and it works perfectly.
These days either crt or tft displays will check if what is coming on the cable is safe or not and will either warn you that you should use another mode that is better or will turn off to avoid damage.
I have never had that modeline entries on my xorg.conf and all displays I have tested worked fine. Of course you should have some good sense and check afterwards if what is being used makes sense (some really old / bad displays don't report their capabilities correctly or don't report them at all) but it should work fine as long as your display supports ddc.
