Even though I have screensaver set for 30 min, and theres no "idle" or "dim" settings in power management as this is a desktop, but every 5 or so min, my desktop will dim and go to the screensaver.
Its driving me nuts

Its a CLI (command line, i.e. terminal) command. About what is does have a look at "man xset" (in a terminal).
BTW. What kind of screensaver do you refer to? There are various, depending on the Desktop you are using.

gnome screensaver, for some reason "xset -s off" pulls up the quick help as if it doesnt recognize it.

There were several reports concerning issues with the current gnome screensaver.
I recommend switching to xscreensaver. The procedure to accomplish this is described in the xscreensaver manual ("man xscreensaver").

Yea it has happened since the 2.26.29 kernel update along with the new version of gnome

Still happening, its like the OS doesnt care I have it set in screensaver it just goes to screensaver every 5 or so minutes

In gconf, change the time here:
desktop -> gnome -> session -> idle_delay
It's set to 5, change it to whatever you want. I still haven;t got power save mode working, though.

Updating gnome-screensaver and gnome-power-manager to the svn version solves the issues I had with both. In your case updating gnome-screensaver should do the trick.

It's exactly the same as the original pkgbuild except that it uses svn. Don't forget to grab the gnome-power-manager.install file as well.
