Whenever I try to install everything is missing. The installer can't find my packages, GRUB, the passwd file, and none of the config files are filled out. They're all just blank when I go to edit them. Also, I'm installing to my SD card and I have the installer on my USB.

Can you be more specefic, if the installer can find the packages it needs to install, it can't install them so you won't have the config files. If you installed but don't have the configs then it is another problem

Well I get to Select Packages and it says "Mount the CD-ROM and install from there" and "I have manually mounted the source media". Since I'm not using a CD I went to another VC and I put in this command:
mount /dev/sdc /src
And got the output: "mount: you must specify the filesystem type"
So I put in this command:
mount /dev/sdc1 /src
It appeared to work, but then when I said I manually mounted and to let me select the packages it said it couldn't find it /src/core/pkg.

You can't skip around in the installer. You must follow each step in order, including setting up networking before you can select packages.

Er...preparing the hard drive is the first step and selecting packages is the second. Am I missing something because I didn't see setting up a network in there? Well I do if you select to install via FTP/HTTP, but I'm not doing that.

If you aren't doing an FTP install, and you aren't using the CD, what are you using?
Edit: I re-read the original post and see that I missed that you're using USB. If you haven't figured this out yet, just treat the USB device as a CD and it should work.

Wow, old post. I fixed the problem btw. I had the wrong file the whole time. But my GRUB problem still isn't solved, even after I edited mkinitcpio for USB support and recreated my kernel image.
