I´m going to install gnome, but I don´t want everything within gnome installed at once. Only base programs., so I can choose eexactly what it is I want to install within gnome. Which progams should I choose to do this?

go to a gnome repository, look for the packages you want, look after depencies and install them by hand with pacman?

Just do "pacman -S gnome", though we have some weird dependencies still in it, it only installs the basic desktop.
The gnome group still includes some weird libs and the help browser we don't need in a basic desktop (who needs a help browser, terminal isn't even in the base gnome group ), but I'm busy fixing them. Currently we have a gtk2 and python transition to do.
