Each time I run wine it changes the mime type. Now it even lets "notepad" to open any text files instead of "gvim".
Is there any option to let wine not to change my mime type?

I've also had this happen. I don't know how to prevent it, but I fixed it by going to the affected files properties and removing notpad from the list of applications (I use gnome).

Run winecfg, Go to Libraries tab and type winemenubuilder.exe into the "New override for library" box. Click add, then select it from the "Existing overrides" box. Click "Edit" and select "Disable" from the list, then click "Apply."
This will disable not only automatic file associations, but also the creation of links on the desktop and in menus, so this may be doing more than what you want.
