I have HAL configured properly, and clicking on the devices causes them to mount without issue. My question is twofold:
1. How do I get full automount on KDE 4? Just plug in the device and it's mounted and ready.
2. Is there a way to display only mounted volumes on the desktop in folder view mode?

If you are talking about devices such as cds, usb sticks and external hard disks etc it already does. Just make sure you have the "Device Notifier" plasmoid on your panel.

The software required Windows XP or better, so I installed archlinux.

In 4.3 you always have to click on the device's icon to mount it. In 4.4 previously mounted devices can be mounted automatically after being inserted.

There is Device Notifier with Automount plasmoid in kde-look.org (you can get it through "Get new stuff" button). Of course, you need plasma for it (not necessary the panel, AFAIR you could place a widget right on the desktop).

As to your second question - this should be possible. Best to add another activity, select Folder View instead of Desktop as its type. Then either add /media as a folder (okay, you get the normal cd and stuff...) or specify /media as your base folder (same again). May be there is another way but I haven't tested it...

Add a new activity? I have been usign KDE for several months, but not sure what you mean by that.

To start off with zoom out, on the left you will now get a menu that lets you add a new activity.
Oh, and make sure you add the activity bar widget to your taskbar

kwin is pretty awesome, and i reckon in the next few KDE releases it will reach feature parity with compiz and match it for speed.

Who knows, but with every release there is something new you couldn't do before. The piccie above shows different backgrounds for the same cube. I know it has been around for some time, but I only just found out about it...
In addition it now has normal panels and "fancy panels" which are like the OSX ones - again see screenshot.
And you can have different widgets on different desktops, aka not different activities on one cube. Note that the light coloured desktop has folder view enabled.
Last time I looked at compiz some the last thing was not possible for example - but then again others were, so there.

Another possibility is to place another Device Notifier widget on the desktop. Rather than being an icon as it is on the panel, it'll just show the list.
