I have looked in xscreensaver-demo but no luck and I cannot seem to find much information on xscreensaver.
Any ideas?

Yes but what am I supposed to change.
In the code appearing on top of the screensaver it mostly starts with xscreensaver suggesting that its an xscreensaver setting I should be changing.
I am a bit of a noob to xscreensaver, I usually use gnome-screensaver but this computer is my lightweight machine.

The text in your screenshot has nothing that comes from xscreensaver as far as I can see, just some messages about electricsheep. Does it show those messages when you run electricsheep directly from terminal (using electricsheep-saver)? Also, in the preferences window, does ticking "Hide errors" fix your problem?

I tried 'hide errors' and it did nothing.
When I run it in terminal I get some of the messages but I also get some when I run xscreensaver, for instance incorrect password attempts are added to the list of junk on the screen.

It looks like it's stderr from electricsheep that is being printed. Run xscreensaver-demo, go to electricsheep, settings, advanced, and change the command line to this:
electricsheep --root 1 2> /dev/null
Or edit ~/.xscreensaver and change it in there.
