This is an idiot question, but for the life of me, I can't seem to get xfce4 to start from the shell CLI.

What is the correct command to start it from the sign in shell?

after you set it up there is a "startxfce4" in /opt/xfce4/bin. This should already
be added to your path, cause there is a shellscript added to /etc/profile.d
