Driver for a brushless DC 24v motor

I have a motor, and the current controller. I want to see whats going on, then plot some graphs too find out optimal speeds (power consumption), power (to get the right gears) ect.
its a machine im builiding, for me.
my current budget is at 0$ so I plan to make due with what I already have.

First I want to be able to take measurements of voltage and amperature to plot on a graph. 0-5v works with USB, im guessing.
any ideas on the 0-24v - also it has to take alot of measurements per second. I have guesses, its practical knowledge that I need ATM. Im not planning on taking apart the psu or the fans, I dont want to get stuck at this phase.

also has anyone been successfully able to measure RPM with the mouse laser, or the wheel thing, or a camera (30 FPS is not enough)?

finally any open source drivers for 3 phase dc brushless motor? (its just changing the output current based on the engines reaction).
