I just converted my /etc/fstab from /dev/sdx format to /dev/disk-byuuid/x format. When I do a df -h now here is my result:
$ df -h

Why does just the root fs show the uuid while everything else shows the /dev/sdx format?

Not strange at all, just normal - I get the same output with uuids in my fstab.
