To avoid this problem, I had to remove my HDMI cable (connected to samsung monitor), start up my computer and then connect once booting completed.
Does anyone know why this happens or a possible workaround? I checked the forums for problems that sounded similar to mine but a workaround for those people was to use the fallback image so I wasn't sure if the only solution for me was a possible udev downgrade.
Edit: So... I rebooted again and it looks like the boot was successful and without any unusual events. Hopefully it stays this way. Thanks for the replies.

rooted, you might want to keep looking. Your problem sounds different, and I don't see anything in your stack trace that references libata or ioread32_rep+0x50, so you probably have a different issue than that bug report. Compare your trace (what you have of it, anyways, the best part of it scrolled off the screen) to the jpg image that's posted in the bug report.
