Using a thinkpad t400s, alsamixer says it has a Conexant CX20585.
00:1b.0 Audio Device: Intel Corporation 82801I (ICH9 Family) HD Audio Controller (rev 03)When I was running Windows 7, the volume was a lot louder.
Any ideas? all the volume bars in alsamixer are to the top, and I only really hear anything between 80-100% volume, below that is basically muted.

In what application? Did you check the application volume control?
Can you try with CLI utilities like aplay mpeg123 or mplayer ?
Eventually you can try with OSS4.
