simple network-based backup (e.g., by plain copying)

Hi there!
I'm looking for a way to easily backup my files to another computer on the LAN. The files are already highly compressed (e.g., .jpg, .mp3, .avi), so something like plain "cp -v" would do. However, simply copying wouldn't delete files on the backup which I deleted in my data directory. So this sounds like a case for rsnapshot-based solutions, doesn't it?
I'd like a solution with a GUI, since the server isn't running 24/7 (so I'm planning to turn on the server like once a week and then trigger the backup manually).
So what would I use? Is luckybackup a good idea?

Best wishes,
Rufus

This page might interest you.
Think there are a few gui front ends out there as well. Just google "rsync gui".
