I would like to know more of what makes an archlinux package just that... archlinux. I figure the best way is to just jump in and try to port a program into archlinux to find the differences between linux programs.
My question is if I have the source code of a program that was made for an OS like debian and CentOS.. how would I even start my path to making it compatible with Arch?

You would start by searching for information rather than simply asking a question here. The words you're looking for are PKGBUILD and makepkg.

Let me embellish -- don't search just this forum, search the wiki.
Do a sudo pacman -S abs
It will pull down the PKGBUILDs for the entire tree and put them in /var/abs
You can use them to build anything available in pacman on your own. Start by standing on the shoulders or giants -- study any of the PKGBUILDs in abs
